10.06.2010



I don't kid.  Spiral mac-n-cheese from the box with Hebrew National 98% Fat Free hot dogs (two of course) mixed in.  Add my favorite condiments- ketchup, mustard, and hot sauce- and I had a lovely night to myself!  Add Teen Mom on Demand, and I was in a cheery mood.  I was incredibly tempted to order my usual from City View Pizza & Grill, Buffalo Chicken Cheesesteak with no bleu cheese on the sandwich, just on the side but I opted to save the money, and the walk to the restaurant to pick it up.  After an 8 mile run yesterday in the rainy cold, the last thing I wanted to do was move.

Key tips for success:
1) Don't follow the instructions on the box.  You've been making this since you were eight- you can do it!
2) Add those hot dogs right on in there- and do it while it's hot!  Some people are scared of the combo, but I promise it's delicious.
3) Do your best to keep any furry animals away from the stove.

  1. Ha! Love it - mac 'n cheese with hot dogs is a childhood favorite of mine... I normally go without the condiments though.

    Fun/easy dinner idea: enchiladas. And if you make a tray of them, you'll have leftovers for during the week! :-)

  4. I don't have a specific recipe, I sort of wing it and it's never exactly the same.

    1. Cook boneless chicken breast or ground beef (or some other meat of your choosing) with a packet of taco seasoning.
    2. When cooked through, shred the meat if you're not using ground. Feel free to add onions, peppers, beans, whatever filling you want with the meat.
    3. Take a pan and pour some enchilada sauce on the bottom (I just cheat and buy jarred - not the same as salsa, it shouldn't be chunky).
    4. Take a large tortilla shell, spoon a little of the meat/veggie filling into the center and roll the tortilla, then place in the pan. Repeat until pan is filled.
    5. Pour the remaining enchilada sauce on top and then add shredded cheese on top.
    6. Stick in the oven and bake until cheese is melted and food is hot. Eat and enjoy!
